3/4 cup Butter, 1/2 chopped onion, 3/4 flour (This is going to be your thickener) Saute butter and onions for 10 min, turn off burner and add flour, mix together and set aside.
In a big pot bring to boil 6-8 cups of water to 6-8 chicken bouillon cubes(use equal amounts).
Add 3 peeled, chopped carrots, 4 red potatoes, cut into cubes, 2 stick celery, 1/2 zucchini sliced and quartered, baby cereal bowl of broccoli(I love broccoli so I use 2 stalks of fresh broccoli), 1/2 cup of frozen peas and any other veggies you want. Simmer 10 minutes(Rumbling boil).
Add thickener and simmer another 10 minutes.
Add 1 cup of sharp chedder cheese and 1/2 cup of swiss cheese grated stir until melted.
This is so delicious, We usually have french bread with it for dipping. Sorry about the recipe not being in recipe form, my friend gave it to me over the phone. Enjoy
