Mix in large bowl:
5 cups flour
2 t. salt
5 t. baking powder
Meanwhile, pour 2 cups boiling water over 2 cups All-Bran cereal.
Cream together:
1 cup shortening
2 cups sugar
4 eggs
Add All-Bran mixture to creamed mixture. Blend in:
1 qt buttermilk
4 cups bran buds cereal.
Add dry ingredients to mixture. Stir just until mixed. Bake in muffin tins at 400F for 20 minutes. Store remaining mixture in the fridge for up to 6 weeks.
(Don't stir after once mixed!)
These muffins are so good! This is the main part of our traditional breakfast that we eat on Christmas morning. It is so nice because you can mix it up anytime before Christmas and then just pop the muffins in the oven on Christmas morning. Enjoy!
