Mandarin Pasta Salad from Pampered Chef

2-3 cups chicken, cooked and diced
8 oz bowtie pasta, cooked and drained, cooled
1/2 cucumber, seeded and sliced
1/2 c. red pepper, chopped
1/2 c. red onion, chopped
6 oz. baby spinach leaves
1 can mandarin oranges, drained
1/2 c. sliced almonds, toasted
Crunchy asian noodles, garnish

Combine ingredients in a large salad bowl and top
with the following dressing, toss and serve.

Ginger Dressing

1 tsp. finely chopped ginger
1 clove garlic
1/3 c. white wine vinegar
1/4 c. orange juice
1/4 c. oil
1 tsp. sesame oil
1 envelope Lipton onion soup
2 tsp. sugar

Blend and refrigerate dressing until use.
Will taste better the day after you make it.

Like the other recipes, this salad is great with or without the chicken. I love this ginger dressing and often use it on other salads and Asian dinners. It's great for homemade lettuce wraps.
