Black Bottoms









In a small bowl combine:
8 oz. cream cheese
1 egg
1/3 cup sugar
1/8 tsp. salt
1 package of mini semi sweet chocolate chips

In a large bowl combine:
3 cups of flour
2 cups of sugar
2 tsp. baking soda
1 tsp. salt
1/2 cup of cocoa

add this to flour mixture and mix until well blended:
1 tsp. vanilla
1 1/2 cups of water
1/3 cup of vegetable oil
1 tbsp. vinegar

Line mini muffin pan w/ mini cupcake liners. Spoon the "cake" mixture into the liners about half way full. Add a smaller spoon full of the cream cheese mixture directly on top of the "cake" mixture. Bake at 350 for 15 minutes.

**This recipe is passed down from my Mom, we always make these at Christmas time**

I made some of these about 6 months ago...Nancy raves about the chocolate cream cheese muffins at Starbucks...I need to make those again.

We've had those Starbucks muffins, they are like crack. I'll have to try these, but maybe it wouldn't be a good think to have a large batch just sitting around the house...
